Scrambled egg biriyani- A delicious treat for egg lovers. Simple and easy dish which we can make without much effort and time. Those who don't love boiled egg in biriyani can go for this method. We can use any kind of rice, here I had prepared using sona masoori rice. Raita, papad or pickle compliment the dish.
INGREDIENTS
WHOLE SPICES
- Cinnamon stick/powder- 1tsp
- Star anise- 1
- Cardamom seed- 1
- Cloves- 2
- Bay leaf- 1
- Fennel seed- 1tsp
- Eggs- 3 no:
- Pepper- 1/2 tbsp
- Chilly powder- 1tsp
- Turmeric powder- 1 tsp
- Salt as required
- Onion- 1 medium size
- Tomato- 1 medium size
- Ghee- 1tbsp
- Oil- 2tbsp
- Rice- 1 cup
- Chilly powder- 1 tbsp
- Turmeric powder- 1 tsp
- Ginger-garlic paste- 1 tsp
- Coriander powder- 1/2 tbsp
- Green chilly- 1
- Garam masala- 1 tsp
- Coriander leaves- 1/4 cup
- Pudhina leaves- 1/4 cup
- Salt and water as required

- Add scrambled egg ingredients in a bowl and make scrambled egg with some oil in a cooker.
- On that same cooker, heat oil and ghee. Add whole spices, let it splutter.
- Add green chilly and onion, saute until onion turns golden brown. Add ginger garlic paste and saute for a minute. Now add all other spices and saute for a minute.
- Add a tbsp of water to avoid burning of spices.Add tomato and cook until it becomes mushy. Now add scrambled egg that we have made and mix well.Finally add coriander and pudhina leaves, mix it.
- Add cleaned rice and mix it. Add required amount of salt and water, rice to water ratio 1:2.
- Close cooker and keep in high flame. When the pressure comes, cook in low flame for about 20 minutes or upto 1 whistle. Tasty and easy scrambled egg biriyani is ready to serve.
