 Beetroot cake recipe- Easy and tasty cake made with beetroot and cocoa powder, for making it even more healthier we can use wheat flour. Beetroot cake was so soft and we just enjoyed having it. Made this cake for Valentine's day and for making it more special, added beetroot glaze as topping. For children who don't like beetroot, will definitely love this dessert. 

INGREDIENTS

FOR CAKE

  1. Maida- 11/4 cup
  2. Butter- 100g
  3. Sugar- 11/4 cup 
  4. Egg- 2 no:
  5. Cocoa powder- 1 tbsp
  6. Beetroot - 1 no:
  7. Baking powder- 3/4 tsp
  8. Baking soda- 1/4 tsp
  9. Milk- 2-3 tbsp
FOR BEETROOT GLAZE

  1. Cornflour-3 tbsp
  2. Sugar- 6-7 tbsp
  3. Water- 1/2 cup
  4. Vanilla essence- 1 tsp
  5. Beetroot puree- 2-3 tbsp

INSTRUCTIONS
  • For beetroot puree, cut the beetroot into small cubes and cook it with half cup of water. Then grind it and make beetroot puree. I had used 4-5tbsp for cake. 
 
  • Whisk butter and sugar until mix becomes light. Butter should be in room temperature. 
  • Add egg to that mix and whisk until it becomes soft and fluffy. To that mixture add beetroot puree and whisk it well. 

  • Grease pan which is used to make cake with butter and spread maida all over the pan. 
  • Take dry ingredients maida, baking soda and baking powder in a vessel. Sift these dry ingredients into the wet mixture.
 
  • Preheat the kadai for 10 minutes with a lid closed by keeping a plate inside in upside down position. 

  • Gently mix batter in cut and fold method.If batter is thick make it loose by adding milk.
  • Pour batter into cake tin and tap it to avoid any air bubbles. 
  • Keep it on preheated kadai using a lifter and bake up to 30-35 minutes in low medium flame. If cake is not baked, cook until it's done, check by using a tooth pick.
  • Soft and tasty cake is ready. Remove cake tin using lifter, let it cool. Demould carefully using knife. 

  • For beetroot glaze, mix water, cornflour, sugar and beetroot puree with a spoon to avoid any lumps.
 
  • Turn on stove and cook in low flame. Mix until it comes in pouring consistency, ie not too watery or thick. This process takes only about 2-3 minute. 

  • After cooling keep the cake in freezer for about 10 minutes, take the cake and pour this beetroot glaze over the cake. 
TIPS 
  • After pouring beetroot glaze keep in fridge for about 5 minutes to set. You can also have directly but this tastes even better.
