Ela Ada/ Elayappam
Ela ada- A south indian sweet and Kerala traditional delicacy, made with sugar or jaggery, shredded coconut stuffed inside rice flour sheet and steamed on banana leaf. This is made mostly during Kerala's own festival time onam. Sometimes even banana can also be used in stuffing. It is also used as evening snack.
INGREDIENTS
- Rice flour- 11/2 cup
- Jaggery- 3/4 cup
- Shredded coconut- 3/4 cup
- Cardamom powder- 1/2 tbsp

INSTRUCTIONS
- Soak rice flour for about an hour. Grind and seive the flour. Now roast till smell comes.
- Add hot water and make a soft dough like we make for idiyappam.
- For stuffing, mix grated jaggery, shredded coconut and cardamom powder. Mix everything with hands.
- Take medium size ball from dough, place it on oil greased banana leaf and flatten them with hands by adding oil on hands. Fill the half portion of it with the jaggery mix.
- Close and press the sides with finger, steam it on a steamer or idly cooker for about 10 minutes in medium flame. Tasty elayappam/ela ada is ready to serve.
- Make rice flour sheet as thin as possible for better taste.
- We can also use idiyappam flour for making ela ada.
Ela ada/appam is very common snack which found in the hotels in kerala. The preparation is easy and also tasty . It is cooked in steam and easily digestible snack.It also prepared and used in temples in Kerala as "Nivediam"and offered to the deity ,especially found in Devi Temples.You have well explained .Good presentation. 👍
