 Pootharekulu/Paper sweet-  A famous traditional sweet of Andhra pradesh made from rice starch, popular for festivals, religious or marriage occasions. When I first tasted this sweet the outer layer melted in my mouth, I really loved that. The thin rice starch layer resembles like a paper so it's also known as paper sweet, stuffed with jaggery/sugar with or without nuts. Rice  sheets are available in East godavari district. Usually these sheets are made with pot upside down, in home we can make on dosa tava but the size of sheet will be small.

INGREDIENTS
  1. Raw rice- 1 cup
  2. Sugar- 4 tbsp
  3. Jaggery- 2 medium size
  4. Nuts powder
  5. Cardamom- 2 no:
  6. Ghee as required
  7. Salt as required
  8. Water as required
  9. Cotton cloth.

INSTRUCTIONS
  • Take 1 cup rice and soak them for about 4 hours. 
  • After 4 hours, grind them with required amount of water and salt. The batter should be watery. After grinding them if its thick make it loose by adding water. 
  • Heat dosa tava. While making rice sheets keep in medium to low flame. Apply oil on dosa tava. Dip cotton cloth in that batter and make one stretch on tava like this, if layer doesn't come do that  process again above that layer fastly. 
  • When sheets are done take them with a spoon and hands carefully. 
  • After making each sheet, clean tava with a cotton cloth. Apply oil and make another sheet. 
  • For filling I had taken sugar powder, jaggery powder and nuts powder. We have to take two sheets for making 1 paper sweet. Take one sheet spread 2-3 drops of water and place another sheet, this help to join sheets. Again spread 2-3 drops of water above sheet and spread ghee. For sugar powder, i had grounded 3 tablespoon of sugar with cardamom. Spread sugar powder using seive. 

  • Fold both sides, again spread ghee and sugar powder.Now fold from other 2 sides and close. 
  • Fold into square, rectangle or triangle shape. Like this u can fill sheets with jaggery or sugar, with or without nuts powder. 

  • Finally for closing these sheets apply water. Tasty paper sweet are ready. 
TIPS
  • To avoid sticking
While taking sheets from dosa tava, our hand and plate which we are going to keep them should  be dry. 
  • The sheet should be in white colour, so always keep flame in low to medium. 
  • For easy folding, apply water to sheets.
