COOKWITHJAMMY/KARACHEV RECIPE
Karachev recipe- karachev, a famous South Indian snack, popular in sattur town (Virudhunagar district) situated in Tamil Nadu. The spiciness and different aroma, makes them different from other snacks. This is one of my favorite snack, I used crushed pepper and cumin for flavor. This snack is also made during diwali time. Traditionally it is prepared by pressing dough on ladle with holes, it needs more practice. Here I used murukku maker for preparing karachev, we can have them with tea, coffee or even rice.
- Besan flour/Gram flour- 11/2 cup
- Rice flour- 3/4 cup
- Baking soda- a pinch
- Asatoefida- 1/8 tsp
- Cumin -1tbsp
- Crushed pepper- 2 tbsp
- Melted ghee- 3 tbsp
- Water as needed
- Salt as needed
- Sift the besan flour and transfer to a bowl.
- Add rice flour, baking soda, hing, crushed pepper, salt and mix them.
- Add melted ghee, cumin and mix with hand.
- Add required amount of water and make soft dough, it should not be sticky.
- I used this type of jali, if u have 3 hole(large size hole) jali u can use that. Apply oil inside murukku maker before filling it with dough.
- Heat oil in a vessel. While preparing keep in medium to low flame. Press them gently into hot oil. Cook both sides and take them out when sizzling sound and bubble reduces.
- Wait until it comes to room temperature.
- Break them into required size and it's ready to serve. Store them in a air tight container.
- Overfrying makes the karachev hard, cook only upto karachev becomes light brown in colour.
- For spiciness u can use chilly powder too or combination of pepper and chilly powder.
